The Sounds seem to have been studio recorded with adjustments made to make them more dramatic a good example of this would be at 1:10 of the video the player unsheathes his sword the sound is much louder and more defined than it would be with a real blade and scabbard.

the music in game is created via orchestra while the sound effects such as swords hitting shields seem to be recorded in a studio and intensified where a realistic sound is not dramatic enough to make the game exciting.

The sound effects serve to make the game more immersive and engaging while at the same time indicating when the player takes damage or lands a killing blow minimizing the need for a HUD.
